I was reading an article in Wicked Leeks, the newsletter from Riverford Organics (if you’ve never seen it, it’s a really good, informative read – you can find out more here) this morning about how the warm, wet autumn has led to a bumper crop of brassicas like cabbage and kale. And the cabbages are particularly big, so more for your money – bargain! And bargains are what we need right now! Continue reading “Roast cabbage and squash chunks with simple tahini dressing”

Autumn squash stew
It’s almost six months since my last post – how time has flown! Back then I was enjoying fresh Spring ingredients, sharing my asparagus and pea pasta recipe. Now we’re deep into autumn, and comfort food is back – this autumn squash stew is the perfect place to start. Continue reading “Autumn squash stew”
Millet and vegetable bake
With the weather so wild and windy at the moment, it’s great to have some tasty comfort foods to help stay warm and cosy. This delicious bake is easy to make, is totally satisfying as well as packed full with healthful nutrients including a good dose of plant-based protein. Continue reading “Millet and vegetable bake”
Lentil, sweet potato and shiitake mushroom loaf
What to have for a Sunday (or Christmas) roast? This is a question I get asked a lot, particularly if a) you’re allergic to nuts or b) you’re just a bit board with nut roast! Continue reading “Lentil, sweet potato and shiitake mushroom loaf”
Roasted squash and harissa hummus
Hummus is still my number one go-to lunch time ingredient. I love it on toast, in wraps, with salads or on baked potatoes. Or just as a lovely dip to coat crunchy veggies with. And even though I do love it so, it is good to jazz it up from time to time. Continue reading “Roasted squash and harissa hummus”
Smoky tofu slices
“Now I’m plant-based, I get really stuck with what to put in a sandwich.” Does this sound familiar? I get sent a lot of messages about this or it comes up in conversations with my nutrition clinic clients. And of course, no matter how much you love hummus (and I do love hummus!), you don’t necessarily want it every day, and neither does your microbiome. Those friendly bacteria that hang out in the gut love a bit of variety; the same thing every day can make them fade not flourish. Continue reading “Smoky tofu slices”
Quick leek, mushroom and broccoli pasta sauce
As its St David’s Day today (1st March), it seemed only right that I share something connected to Wales. Apart from stunning scenery and lush green countryside, the three things that spring to my mind are daffodils, sheep and leeks. And there’s only one of those that can feature in one of my recipes, so leeks it is! Continue reading “Quick leek, mushroom and broccoli pasta sauce”
Red pepper and white bean sunshine soup
If you’re reading this sitting in the hot summer sun, you may wonder why I’m posting a soup recipe in the middle of summer. But if you’re used to a British summer, then you’ll know that any day at this time of the year can be a soup day, as the weather is somewhat unpredictable. Continue reading “Red pepper and white bean sunshine soup”

Spicy baked stuffed aubergine
Luckily my lovely husband is really open to eating my creations; he celebrates the successes and tolerates the disasters! He’ll try most things but there are two vegetables he just can’t get to grips with – aubergine and beetroot, which is a shame as I love them both. But as he’s away a lot with work, I make sure I get my fill then, rather than torturing him with things he just won’t like. Continue reading “Spicy baked stuffed aubergine”
