Orange and pomegranate salad
A quick and tasty seasonal winter salad that's packed full of immune supporting nutrients as well as gut loving fibre
- 3 handfuls winter mixed salad leaves
- 1/2 small red onion thinly sliced
- 2 medium oranges
- 1 tbsp walnuts cut in half
- 1/4 pomegranate seeds only
- salt and pepper
- 1/2 lemon juice only
Cut the peel off the oranges and remove any excess pith. Cut into slices, then cut the slices in half
Scatter the salad leaves over the base of a bowl.
Sprinkle half the sliced onions, walnuts, orange slices and pomegranate seeds over the top. Repeat with the remaining amount.
Season with salt and pepper to taste and finish by pouring over the lemon juice.
Serve straight away.
