Orange and pomegranate salad

A quick and tasty seasonal winter salad that's packed full of immune supporting nutrients as well as gut loving fibre

  • 3 handfuls winter mixed salad leaves
  • 1/2 small red onion thinly sliced
  • 2 medium oranges
  • 1 tbsp walnuts cut in half
  • 1/4 pomegranate seeds only
  • salt and pepper
  • 1/2 lemon juice only


  • Cut the peel off the oranges and remove any excess pith. Cut into slices, then cut the slices in half
  • Scatter the salad leaves over the base of a bowl.
  • Sprinkle half the sliced onions, walnuts, orange slices and pomegranate seeds over the top. Repeat with the remaining amount.
  • Season with salt and pepper to taste and finish by pouring over the lemon juice.
  • Serve straight away.
