Ingredients

  • 1 medium red onion peeled and sliced
  • 2 cinnamon sticks
  • 3 whole cloves
  • 2 star anise
  • 1 medium apple cored and cut into thin slices
  • 1 fat clove of garlic peeled, halved and thinly sliced
  • 1 medium red cabbage quartered, hearts removed and thinly sliced
  • 1 large orange juice and any pulp you can rescue (approx 100mls)
  • 2 tbsp dried cranberries
  • salt and pepper to taste

Equipment

  • large stainless steel pan

Method

  1. Heat a couple of tablespoons of water in the base of the pan over a medium heat. Add the sliced red onion with a pinch of salt and sauté for 5 minutes, stirring from time to time. You may need a little more water to stop it sticking.
  2. Pop the whole spices in the pan and cook for a couple of minutes until they release their gorgeous aroma.
  3. Add the apple and sliced garlic and cook for another 2 minutes before stirring in the red cabbage. Mix everything together well, then pour in the orange juice.
  4. Pop on the lid and cook on a low heat for 30 minutes, stirring from time to time.
  5. Add the dried cranberries to the pan and continue to simmer for another 20 minutes.
  6. Season with salt and pepper to taste.
  7. Remove the whole spices before serving.

Notes

This cabbage dish can be made a day in advance and reheated before serving. It also freezes well.
